- Primero comenzamos con el arroz. El arroz que acompaña al lomo es totalmente blanco, solamente lleva ajo y deli arroz que le dan ese sabor de comida peruana. Se frĂe el arroz en aceite junto con un diente de ajo picado bien fino hasta que el arroz estĂ© blanco, se agrega dos tazas de agua hirviendo y el sobre de Deli arroz. (Deli arroz viene con sal, verificar primero si estĂĄ a nuestro gusto antes de añadir mĂĄs). Poner a fuego lento con tostador por 20 minutos aproximadamente.
- Continuamos con las papas fritas. Tomamos la papa y la cortamos a la mitad y de la mitad sacamos 3 tajadas, la idea es que quede un corte mĂĄs grande que el de la papa frita normal. Luego las ponemos en un olla con agua caliente y sal. Dejamos cocinar por unos 5 minutos a fuego alto y luego colamos y dejamos filtrar el agua. Luego ponemos una sartĂ©n a calentar con aceite y agregamos las papas a freĂr. Yo uso este mĂ©todo porque es mĂĄs rĂĄpido y absorbe menos aceite.
- Seguimos con el lomo. Cortamos la carne en trozos pequeños, reservamos en un bowl con sal, pimienta y un diente de ajo picado bien fino. Ahora tomamos la cebolla morada y vamos sacando capa por capa y cortando en juliana. Aplicamos el mismo corte con el ajà amarillo
- En una sartĂ©n colocamos aceite a calentar y agregamos el lomo y lo sellamos por ambos lados, retiramos y reservamos. En la misma sartĂ©n agregamos cebolla y ajĂ, salteamos por un minuto y reservamos.
- En la sartén agregar las 3 cucharadas soperas de siyau, 3 de vinagre y 5 de caldo de carne. Cuando esté hirviendo agregamos lomo, cebolla y ajà y dejamos saltear por 1 minuto
- Como paso final se agrega el cebollĂn y el tĂłmate los cuales estĂĄn previamente reservados ambos cortados en juliana. Dejamos cocinar por un minuto o dos, o hasta que se evapore el vinagre.
- Una vez finalizado colocamos el arroz blanco con molde, agregamos papas fritas y una porciĂłn de lomo decorado con cilantro.
