- Lo primero que haremos es poner hervir los porotos hasta ablandar. Más o menos 1 hora hirviendo para que esté bien blandito. Una vez hecho esto colar, machacar y reservar (a mi no me gusta tan machacado así que deje algunos enteros pero eso es a mi gusto personal. Ustedes pueden machacar lo todo hasta que quede un puré)
- Por otro mientras hervimos los porotos tenemos que hacer la masa de las tortillas para tenerlas preparadas. Mezclamos la harina con la sal y el agua. Amasamos y separamos en varios bollitos y reservamos
- Ponemos a hervir arroz y reservamos. En una sartén honda o en un wok sudamos la cebolla picada en brunoise, el morrón y el ajo picado. Le agregamos la salchichas cortadas en rodajas (si quieren) y cuando esté bien dorado incorporamos los frijoles machacados. Salteamos bien. Salpimentar a gusto y reservar.
- Por último cocinamos las tortillas de harina. Se hacen a lo último porque deben estar frescas para que no se quiebren y puedan ser manejable a la hora de comer. Se hace en 2 minutos. Estiramos los bollitos que realizamos con un palote y lo ponemos en una sartén (sin aceite sin nada) esperamos 5 segundos y le damos la vuelta, esperamos otros 5 segundo y sacamos las iras colocando en un plato y sobre ella una bolsa o un film para que mantenga la humedad y no se seque. El tamaño es a su gusto.
- Y listo colocar en un plato un poco de arroz, un poco de frijoles y disfrutar con las tortillas de harina. (Vos las armas a tu gusto)
