- Por otro lado, en una sartén grande, se añade un chorro de aceite de oliva y se saltea la carne. Cuando haya desaparecido el color rojizo de la carne, añadimos la cebolla y los ajos picados, y salteamos durante un par de minutos, removiendo de vez en cuando.
- A continuación, añadimos la sal, la cayena molida, el comino y la pimienta negra, removiendo todo bien. Luego, las alubias y el maíz (previamente lavados y bien escurridos), salteamos unos 2 min y añadimos entonces la lata de tomate y el chile jalapeño en rodajas y sin las semillas. Removemos todo bien y dejamos cocer unos 10 min a fuego medio-bajo.
- Una vez pasado el tiempo, añadimos la pasta reservada y previamente escurrida y mezclamos todo bien.
- Pasamos la mezcla a una fuente refractaria (engrasada), y colocamos por encima el queso rallado. Tapamos con papel aluminio y llevamos al horno a 180°C durante unos 20 min. Pasado ese tiempo, destapamos y horneamos unos 10 min más.
- Una vez fuera del horno, espolvoreamos con cilantro fresco bien picado. A la hora de servir, podemos poner un poco de crema agria por encima y unas rodajas de aguacate. Listo!! Sobra decir que está delicioso.
