Básicamente es arroz, ajo, cebolla y carne.

- 3 salchichas de carne (200 gramos)
- 1 trozo longaniza (200 gramos)
- 200 gramos costilla de cerdo troceada
- 200 gramos cuello de cordero troceado
- 4 filetes jamón serrano cortado a trozos
- 4 dientes ajo cortados a láminas
- 1 cebolla grande picada media
- 3 tazas arroz
- 12 olivas negras con hueso
- Sal, pimienta
- 1 cucharada pimentón dulce
- 1 cucharada tomillo (o perejil)

- 6 cucharadas aceite de oliva

- De igual manera reímos los trozos de cuello unos 7 minutos, los escurrimos bien y reservamos aparte
- Sobre el aceite de la cazuela echamos la cebolla, los ajos y la sal y rehogamos a fuego medio-bajo 10 minutos
- Añadimos las olivas negras y removemos
- Añadimos el arroz y lo rehogamos unos 10 minutos a fuego bajo removiendo constantemente para que no se pegue
- Añadimos el jamón cortado a tiras cortas y removemos
- Echamos el caldo hirviendo y removemos
- Echamos las carnes, el pimentón y la pimienta y removemos
- Cocinamos 15 minutos aproximadamente a fuego medio hasta que reduzca el caldo. Corregimos de sal si es necesario. Apagamos el fuego
- Añadimos por encima el tomillo y dejamos reposar 5 minutos
